Santa literally brought Em for Christmas. I fell asleep and she finally got to the apartment at 2 a.m. and she came with presents from America (out of all things I asked for face wash and cinnamon). We finally caught up with each other and made it to bed around 3:30 so we could make it to church in the morning.

At least church was on a Sunday this year, having church instead of school was a much better way of celebrating my favorite holiday. My birthday wasn’t as lucky and I will have school for the first time in my 21 years on my birthday. After our church we went to a market that Em wanted to explore. For the afternoon she had lunch plans for us to go to the parents’ home of a Chinese friend she met in San Fran.

We got the apartment complex around 3 p.m. with the dad waiting out for our taxi at the gate. He was a cute little Chinese doctor that had one year experience of English speaking eleven years ago. We introduced ourselves and he guided us into his home to meet his wife. She was waiting for us with Chinese tea and black sesame rice balls in here childish house slippers and bright red spectacles cover her face. We had what conversation we could with the limited knowledge of each others’ languages. Lunch soon turned into dinner and Em and I were wondering what we had signed ourselves up for. Eventually, our China dad told us what our plans were: they were going to take us to dinner, an International Christian church service, and then drive us around Shanghai. This initially was a conflict as Em already had plans for the evening, but as soon as the doctor was aware of this he politely demanded that we cancel our other plans to spend Christmas with them instead. We couldn’t say no and that was that.

For dinner we had sweet and sour fish, clam chowder served in an gutted orange peel, deep fried soy beans, pork stuffed buns, shrimp, and a couple other Chinese dishes.

We heard the church choir singing over the street speakers as we got out of the car. Our China parents directed us into the church to sit and listen to the choir’s Christmas program. The choir fulfilled my Christmas cheer. Thank you baby Jesus for coming to the Earth and making all things possible, even such that I can come to China without knowing a lick of Chinese and still survive.

Before say our thanks and hugging our “parents” good-bye, baba drove us around Shanghai showing us some famous sites and even where his son was born. Then he dropped us off back at YouWei’s apartment to end our Christmas evening with strangers.

2 tbsp. olive oil

1 onion, chopped

1 1/2 tsp. ground cumin

1/2 tsp. chili powder

Kosher salt and black pepper

1 28 oz. can whole San Marzano tomatoes

1 15 oz. can chickpeas, rinsed

1 head cauliflower, cored and cut into small florets

1 5 oz. package baby spinach, chopped

1 c. couscous

1. Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until it starts to soften, 4 to 5 minutes.

2. Add the cumin, chili powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring, until fragrant, 1 minute.

3. Add the tomatoes, crushing with your hands as you add them, and their liquid, chickpeas, cauliflower, and 1/2 cup water and bring to a boil.

4. Reduce heat and simmer until the vegetables are tender and the liquid has slightly thickened, 15 to 20 minutes.

5. Fold in the spinach and cook until just wilted, 1 to 2 minutes.

6. Meanwhile, place the couscous in a large bowl. Add 1 c. of hot tap water, cover, and let sit for 5 minutes. Fluff with a fork. Serve with the stew.
